‘the Cove’ MASTERCLASSES

…NEW MASTERCLASSES 2010…

2010 promises to be a year of information and inspiration at ‘the Cove’ with the launch of ‘the Cove’ Masterclasses; events designed to give guests an insight into the techniques behind some of ‘the Cove’s award-winning dishes.

In the first Fish Masterclasses, Head Chef Arty Williams demonstrated how to make the most of the local seafood which quite literally surrounds us. From filleting techniques to flavour and texture combinations; guests were treated to a close-up demonstration in the comfort of ‘the Cove’s restaurant.  Arty created fish dishes from start to finish, giving tips and advice along the way. At the end of the demonstration guests tasted the finished products, asked questions and sought advice over drinks with their fellow guests.

‘It’s amazing how far a few simple little tips will go when creating a dish’ says Arty, ‘come along and pick up some great dishes & hints and see how it affects your cooking at home!’

Each masterclass starts at 6.30pm at ‘the Cove’ restaurant.

ARTY’S PROTOGES IMPRESS; Young Chef of the Year victory for Arty’s Mentees

Arty Williams is celebrating yet again although this time not for his own direct success but for that of his two mentees, Joe Taylor and Rob Amy, who took first and second place respectively in Falmouth Rotary Club’s Young Chef of the Year competition last week.

Joe and Rob, who had both completed two weeks of work experience at ‘the Cove’ earlier in the year, were required to plan, prepare, cook and serve a two-course meal to the judges in the two-hour final of the Falmouth heat of the competition. They competed against 8 other competitors from Falmouth School all of whom had been mentored by chefs from the Falmouth Hotel, St Michaels Hotel, Green Lawns Hotel and the Greenbank Hotel.

Joe’s winning menu, which was deemed to be of ‘Masterchef quality’ by the judges, consisted of Falmouth Bay Scallops with Pancetta and Parnsip puree to start with Venison accompanied with a Spiced Prune sauce to follow. In contrast Rob chose a main course of Local Haddock with Squid, Smoked Sausage and Cockles with a Blackberry and Apple Tart to follow.

‘Both of the boys deserved to win’ said Arty who was incredibly impressed not only with the quality of the food produced by his young proteges but with the professionalism with which they worked. ‘The dishes created by both Rob and Joe were excellent and of definite restaurant standard; its just a shame there was only one first place!’

Arty, whose own career started as a teenager working in a hotel restaurant kitchen, has long been a supported of supporting young local talent and is positive that more competitions like this will open up the world of catering as a viable career option;

‘Catering and hospitality seems to be overlooked as a career option in a lot of cases, but it opens up a world of possibilities if you have the right drive, passion and talents. By giving young people the opportunity to explore this industry hopefully more will see the benefits of it and find a career that they really love’   

Joe’s victory means that he now goes through to the district finals of the competition which will be held in February 2010.
