Christmas with Caines

If you’re looking to treat yourself to an unparalleled dining experience this Christmas, look no further!

On 14th December, The Cove will play host to one of Michael’s exclusive events where he, and our team of talented chefs, will craft a seven-course tasting menu that will showcase some of the best seasonal produce in Cornwall. 

Kick the evening off with a complimentary glass of fizz and delicate, handmade canapés. Then take your seat and enjoy a selection of delicious dishes, each introduced by Michael who will detail the invention of the recipes and the locality of the ingredients. 

The first course will consist of roasted wild mushroom epsuma served with black truffle oil. The second, fresh, Cornish scallops served with caramelised cauliflower puree, raisin vinaigrette, cumin velouté and lemon thyme oil. As you all know, local seafood is a massive part of our ethos so we wanted to showcase the incredible produce that’s caught in our region. Course three is a three-way duck terrine accompanied by pineapple and cardamom chutney with toasted brioche, while course four will showcase braised brill with seafood chowder, oyster velouté and Exmouth caviar. 

Course five is a loin of venison served with braised red cabbage, chestnut and fig puree, celeriac and salsify with a red wine sauce. Moving on to dessert, course six will consist of kiwi and lime sorbet served with coconut mousse atop a coconut and almond crumb. Delicious! 

For those who love a little indulgence to round off their meal, our final course will be a 41% Alunga milk chocolate mousse served with passionfruit and vanilla ice cream.
