Meet our new Restaurant Manager

We have a new addition to The Cove team. Everyone meet James, our new Restaurant Manager who is passionate about all things hospitality. We sat down with him for a few minutes to get to know more about him.

Introduce yourself!

My name is James and I’m the new Restaurant Manager here at the Cove Restaurant & Bar. Originally from Epsom, I’ve been in the hospitality industry for 12 years and have loved every second. I relocated to Cornwall 3 years ago and have worked at some of the most desirable hotels in county, including St Mawes Hotel (St Mawes), Watergate Bay Hotel (Newquay) and The Old ferry Inn (Bodinnick). Having dedicated the last 3 years of my career to the hotel industry, I wanted a change and decided to focus on restaurant management. The location, the view and food sold The Cove to me and being able to work for Chef Michael Caines is so exciting!

What is your favourite foodie delicacy?

A fresh handpicked white meat crab sandwich from Falmouth Fishmongers. They fill the sandwich to the brim with crab meat and it’s delicious. Unlike most places in Cornwall, it’s not too expensive either.

Name a fun fact about yourself.

My parents have an equestrian farm in Halvasso and I help to look after 4 donkeys and a foal adopted from The Flicka Foundation Donkey Sanctuary. Their names are Tulip, Marigold, Millie and Trixie, and our latest newborn is called Paddington Bear as a tribute to our late Queen Elizabeth.

Have you taste-tested any of The Cove’s dishes? If so, which is your favourite?

Currently, we have Chicken thigh stuffed with a chorizo mousse, butternut squash risotto, pickled shallots, red cabbage powder, sherry gel, carrot and coriander foam. This dish is exquisite and fills your mouth with an explosion of flavour.

I’ve also fallen in love with our new dessert. Coconut and chocolate mousse, lime and ginger gel, candied cashew nuts, salted coconut crumb, pickled chilli candy with a mango and coriander sorbet. I adore chocolate mousse so this ticks all the boxes in terms of flavour, presentation and yummyness.
